OF COURSE: PRIX-FIXE MENUS ARE BACK
Prix-fixe meals are a proven format for diners who prefer to sit back, relax, and turn all decision-making to the chef. They’re a boon for operators, too, and tucked among these multi-course experiences are strong upside operational advantages: more predictability and better planning/timing in the kitchen, streamlined delivery of courses, fewer ingredients, and less on-hand inventory. It’s probably true, too, that margins are strongly favorable on these spendy menus that go from very approachable, say $75 to $85, to the new pricing frontier set at two NYC restaurants: Per Se and Masa recently added $800 options, wine not included, to their prix-fixe lineups.
